Mint chocolate mousse


  • 1 pint double cream
  • 1/2 box After eight dinner mints
  • 2oz caster sugar
  • 1-2 drops vanilla essence
  • 1 bar chocolate to melt
  • Strawberries and mint leaves to serve


  1. Whip up cream to soft peaks
  2. Fold in sugar and vanilla essence
  3. Whizz up chocolates in food processor and fold into cream mix
  4. Present in wine glasses
  5. Drizzle with melted chocolates and serve with strawberries and mint leaves
