Mint chocolate mousse

Ingredients
- 1 pint double cream
- 1/2 box After eight dinner mints
- 2oz caster sugar
- 1-2 drops vanilla essence
- 1 bar chocolate to melt
- Strawberries and mint leaves to serve
Method
- Whip up cream to soft peaks
- Fold in sugar and vanilla essence
- Whizz up chocolates in food processor and fold into cream mix
- Present in wine glasses
- Drizzle with melted chocolates and serve with strawberries and mint leaves
